Brinjal fritters

Crispy brinjal is a delicious recipe served as a side dish. Brinjal slices in rice flour and gram flour makes the brinjal absorb less oil and gives a nice crispy finish.

Cut brinjal into round shape

In a bowl add red chilli powder,salt and water to make a better.put brinjal rounds in this better and set aside to marinated.

Leave it for 30 minutes

To prepare batter, combine gram flour,rice flour,salt,red chilli powder,turmeric powder,all spice powder.cumin seeds and crushed coriander. Add water as required and mix well to make a thick batter.

Leave it for 30 minutes.

Heat sufficient oil in a pan.

Dip the marinated brinjal roundels in the batter and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.

Serve hot brinjal fritters with chatni and ketchup.
